Ingredients
- 4 cans Great Northern beans
- 2 gallons water
- 6 ounces chicken soup base
- 2 pounds onion, chopped
- 1 ounce garlic, minced
- 1 1/2 teaspoons salt
- 3 pounds chicken or turkey white meat, diced
- 1 pound 8 ounces green chiles, canned, diced
- 2 tablespoons cumin, ground
- 1 1/2 tablespoons oregano, dried, crumbled
- 1 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cloves, ground
- 1 tablespoon cilantro, dried, crumbled
- 1 pound 12 ounces Monterey Jack cheese, shredded (optional)

Preparation
Step 1
Drain Beans. Place in steam-jacketed kettle.
Add water, chicken soup base, onions, garlic and salt to beans. Bring to boil. Cover, reduce heat and simmer for 2 hours stirring occasionally.
Add the rest of ingredients except for cheese. Cover and simmer for 30 minutes.
Sprinkle1/2 ounce of cheese over each portion.
