Ingredients
- 1 cup sugar
- 1 cup butter
- 4 ounces cream cheese
- 1 egg yolk
- 1/2 teaspoon vanilla
- 2 1/2 cups all-purpose flour
- 1 dash salt
Preparation
Step 1
Using mixer & a large bowl, cream together
1 Cup sugar
1 Cup butter
4 oz. cream cheese
Separate one egg, and discard the egg white, add the egg yolk to the creamed mixture
Mix in 1/2 teaspoon vanilla and desired food coloring
Gradually add 2 1/2 cups flour and a dash of salt
Dough should be clay-like at this point. If it's too soft or sticky, then refrigerate for about 15 minutes, otherwise, you're ready to load the dough into a cookie gun or spritz machine. I usually decorate them with colored sugars or little non-perils before baking.
Bake at 400* for 7-8 minutes. Do not overcook. These cookies are best if removed before they turn brown and the color is still vibrant. Allow to cool on the cookie sheet for 1 minute before removing to a wire rack to cool completely.
Makes about 8 Dozen

NOTES : Eggnog Spritz Cookies: Substitute 1 teaspoon rum extract for vanilla. Add 1/4 teaspoon nutmeg with dry ingredients.
