Tomato-Horseradish Butter

A delicious way to top a steak. I've even put this on a bagel before... it's that good. You can also make this a couple of days ahead of time. Enjoy!
Ingredients
- 4 tablespoons butter
- 1 sun-dried tomato (about 2-ounces) packed in oil, drained and minced
- 2 garlic cloves, minced
- 1 tablespoon prepared Horseradish
- 1 teaspoon lime juice
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon salt

Preparation
Step 1
Make sure you drain and then chop the Sun Dried Tomato into fine pieces or else the butter will be 'stringy'.
Combine all the ingredients. If available, use a small food processor and pulse a few times. It's easy enough to mix by hand as well (which is what I normally do).
Lay out some plastic wrap and put the butter mixture into a log in the middle. Then rollup like a tootsie roll.
Refrigerate until firm.
