TWICE BAKED MASHED POTATOES

Ingredients
- 5 pounds of Potatoes, peeled, cubed, cooked and drained
- 1 pound of Bacon, cooked crisp and crumbled (save 3 pieces for topping)
- 1 large onion, diced
- 3 TBSP. butter (plus 3 T. for topping)
- 8 oz. Cream Cheese
- 3 TBSP. Sour Cream
- 3 TBSP. parsley (plus 3T. for topping

Preparation
Step 1
Mash cooked cubed potatoes in mixer. Add cream cheese, sour cream, butter, parsley, onions until blended well. Mix in cooked bacon BY HAND (bacon may stick to the beaters). Pour into 9x13 oblong baking dish. Top with reserved butter, bacon and parsley. Bake at 350'F oven for 1 hour. Can be assembled the day before if refrigerated, then baked.
