Bran Muffins

Ingredients

  • 1 C flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp slat
  • 3/4 C raisins
  • 1 C buttermilk
  • 1 C natural bran
  • 1/3 C cooking oil
  • 3 T molasses
  • 1 egg
  • 1/4 C brown sugar
  • 1/2 tsp vanilla

Preparation

Step 1

In large bowl combine flour, baking powder, soda salt and raisins. Stir well. Push up around sides of bowl making well in centre.

In another bowl stir buttermilk with bran. Let stand 5 minutes.

Add remaining ingredients to bran mixture in order given. Beat with spoon until mixed. Pour into well. Stir just to moisten. Batter will be lupy. Fill greased muffin cups 3/4 full.

Bake in 375 oven for 20 - 25 minutes. Let stand 5 minutes. Remove from pan.
