Dark Chocolate Dipped Macaroons

Ingredients

  • 2 1/2 cups dried unsweetened shredded coconut
  • 1 1/2 tbsp almond flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 4 large egg whites
  • 1 tsp vanilla
  • 12 oz. dark chocolate

Preparation

Step 1

Combine shredded coconut, almond flour, sugar and salt till well blended. Break up any chunks of potato starch with the fork.

In a small bowl, whisk egg whites and vanilla until frothy.

Preheat oven to 325.

Pour over the dry ingredients. Let sit for 20-30 minutes to rehydrate coconut.

Stir batter again. Then place spoonfuls of mixture on a baking sheet lined with parchment or Silpat.

Bake approximately 20 minutes - until edges start to brown.

Let cool directly on pan.

Once cool dunk bottoms in melted chocolate. Place on parchment paper. Drizzle additional chocolate over the tops.

Cool in refrigerator.
