Ingredients
- 10 eggs
- salt and lots of freshly ground pepper to taste
- 1/2 c freshly grated parmigiano-reggiano or whatever kind of cheese is available
- 1/2 lb pancetta, prosciutto, bacon, or ham, sliced crosswise into 1/4" strips
- 6 green onions, finely chopped
- 1 jalapeno or serrano chili, minced
- 5 garlic cloves, minced
- 1 c fresh cilantro
- 1 avocado, diced
- 1 canned or jarred roasted red bell pepper
Preparation
Step 1
In bowl, beat eggs, salt, black pepper and cheese. Set aside
Cook pancetta in a saute pan over medium-high heat, stirring occasionally til it is done like crisp pieces of bacon
To the pan, add scallions, jalapeno and garlic. Cook for 2-3 minutes or til garlic shows the first sign of turning golden.
Add cilantro and avocado. Stir for 1 more minute. Reduce heat to medium, add egg mixture to pan and stir til eggs are cooked to your liking
