Cinnamon Pumpkin Banana Bread

Ingredients
- 1 (15 oz.) can pumpkin
- 2 ripe bananas
- 1 t. vanilla
- 2 large eggs
- 2 cups white whole-wheat flour
- 1 cup quick rolled oats
- 3/4 cup flax meal
- 3/4 cup sugar
- 1-1/2 t. baking powder
- 1/2 t. baking soda
- 1/4 t. salt
- 1 t. pumpkin pie spice (or 3/4 t. cinnamon, 1/4 t. allspice)

Step 1
1. Heat oven to 350 degrees. Coat 2 standard loaf pans with butter.
2. In food processor combine first 4 ingredients and process until smooth. Add remaining ingredients and blend thoroughly, about 30 seconds.
3. Pour batter into loaf pans. Bake 45-50 minutes. Cool 10 minutes, then remove from pans and allow to cool completely.
