Ingredients
- Boneless chicken breasts
- Flour
- 1 Egg
- 2 t. olive or vegetable oil
- 2 T. wine or water
- Seasoned bread crumbs
- Parmesan cheese
- Clarified butter or light vegetable oil
Preparation
Step 1
Flatten boneless chicken breasts between wax paper with a rolling pin, approximately 1/4 inch. Refrigerate for 15 minutes. Combine equal portions of Parmesan cheese and bread crumbs on a plate. Combine egg with oil and liquid.
Dip chilled breasts in flour, then the egg mixture, and finally the cheese and bread crumbs. Refrigerate at least 15 minutes. Can be frozen at this point for later use. Saute in butter or oil about 3 -5 minutes.
Substitute chicken tenders for a great meal for kids.
