Ingredients
- 1/2 c. white wine vinegar
- 1/4 c. sugar
- 1/2 t. Dijon mustard
- 1/2 t. salt
- Dash of pepper
- 1 c. salad oil
- 1 kiwi, peeled and cubed
- 2 c. cubed, cooked chicken or turkey
- 1 4 oz. jar pimentos, sliced
- 1/2 c. thinly sliced celery
- 2 or 3 kiwi, peeled and sliced
Preparation
Step 1
Blend vinegar, sugar, mustard, salt and pepper at high speed in a blender. Gradually add salad oil at high speed. Add cubed kiwi and blend until just smooth. Chill this dressing. Combine chilled, cooked chicken with pimentos, celery and the peeled, sliced kiwi. Toss with dressing and serve on lettuce leaves.
