- 2/3 cup shortening
- 2 2/3 cups white sugar
- 4 eggs
- 2 cups mashed bananas
- 2/3 cup water
- 3 1/3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves (I used half a teaspoon because I didn’t want mine too ‘clovey’.)
- 2/3 cup chopped pecans or walnuts
- You will also need:
- 12 250 ml canning jars
- funnel
Preparation

said the jars will keep up to a year in your pantry if sealed properly. To be safe, I wouldn’t make these more than a week before your wedding. ) Follow the instructions here for
Preheat oven to 325 degrees F (165 degrees C). Grease insides of a dozen 250ml canning jars. (I wiped mine down with vegetable oil.)
In a large bowl, cream shortening and sugar until light and fluffy.
Beat in eggs, bananas, and water.
Add to banana mixture. Add nuts and stir them in with spoon.
Insert canning funnel into mouth of jar and pour mixture into greased jars, filling half full.
Place jars directly on rack in oven.
While jars are still warm, add lids. Screw on tightly. If you sterilized your jars (as I mentioned, I didn’t because I didn’t plan on storing mine), listen for the ping once you have added the lids; this means that the jar is sealed. If you miss the “ping”, wait until they are completely cool and press on the top of the lid. If it doesn’t move at all, it’s sealed.
Make a ‘ribbon’ by ripping a piece of vintage fabric.
Fringe the edge of the circle and tie the ‘ribbon’ around the jar. Add a tag and you are good to go!

May I ask where did you find your vintage sheets? We don't have many clean thrift stores in my area, they are mostly homeless shelter drop off places. I have looked online but they are spendy!

Do you need to prepare the lids by soaking in boiling water before putting them on the jars? Do you put the lids on the jars right out of the oven?
What can I use in place of the shortening?
Love this! I make banana bread like this all the time and send it to my Hubby while he is deployed! Its perfect for that!
Can you use a boxed mix for this?
Are there other bread recipes you can use? The smell of bananas makes me highly sick, so I can't use them.
Do you have to leave the bread cool before adding the lids?

i love this idea! i have a friend who loves oatmeal raisin cookies,i make them for him in bars instead and i was wondering if i could do the same thing in a jar?
I have been making this recipe for over 20 yrs. as Christmas gifts. I was the one that submitted the recipe to AllRecipes.com. Sterilize the jars and lids in boiling water. Spray the jars with Pam Cooking Spray. Be sure to wipe the rims after baking before screwing on the lids or they may not seal. Because the jars are vacuumed sealed, the Banana Bread will keep for at least a year. Just as moist and good a year later. Makes good emergency refreshments to serve with coffee for drop-by guests or for breakfast. Just take out of the jar (Be sure to use WIDE MOUTH jars, and they'll slip right out) and heat in the microwave for a few seconds.

Use wide-mouth pint size canning jars. I have used several different recipes besides banana nut bread - pumpkin, zucchini, apple, cranberry, brownie nut bread, etc. You could even use cake mixes mixed according to directions on back. Just be sure not to fill jars over half full to allow for rising as baked. Take the jars out of the oven one at a time and wipe the tops of jars with paper towel to be sure there is no oil or moisture on top to seal properly. Screw lid on tightly. Then remove next jar and repeat. As they cool, the lids will pop. This is a sign that they have sealed properly. To make sure there is a good seal, press on lid after cooling. If it moves up and down, it is not sealed. If sealed properly, it will not give. Mine always seal, but if it doesn't, eat within a few days. If sealed properly, it will keep at room temperature for a year.
Make sure you spray the jar or wipe down with oil. When it's cool, just go around the edges with a butter knife.It will slide out easily.
