Ingredients
- 1 (4oz) can diced green chilis, drained
- 16 oz sharp cheddar cheese shredded - divided
- 6 eggs, beaten
- 1/2 c chopped roasted red peppers
- 2 T chopped jalapenos
- 2 T chopped fresh cilantro

Step 1
Preheat oven to 325. Coat a 9x13 dish with cooking spray. Spread out green chilis on bottom of dish. Sprinkle cheese evenly over chilis. In large bowl, combine eggs, red peppers, jalapenos and cilantro. Pour into prepared casserole and bake 30 minutes til just set. Do not over cook. Cut into squares and serve warm or at room temp.
