Rabbit with Prunes, Hazelnuts and Quinoa

Ingredients

  • 3 saddles of rabbit (750g/1 2/3 lb), boned,
  • 100 g/3 1/2 oz prunes, stones removed,
  • 2 ActiFry spoons shelled hazelnuts,
  • 100 g/3 1/2 oz quinoa (or 250 g/2 oz/9 oz cooked),
  • 1 ActiFry spoon olive oil,
  • 1 cube chicken bouillon,
  • 1 onion

Preparation

Step 1

Cook the quinoa as indicated on the package. Soak the prunes in 300ml/10 fl oz tepid water.

Tie up the saddles of rabbit tightly and then cut between the string to form 4 tournedos per saddle. Peel and mince the onion. Put it in the ActiFry and cook for 5 minutes. Add the saddles and cook for 7 to 1à minutes.

Drain the prunes. Dissolve the bouillon cube in the prune water and add the prunes, hazelnuts and quinoa to the ActiFry. Cook for 5 minutes. Remove the strings from the rabbit and serve the mini tournedos with the prune quinoa.
