  • Frosting:
  • 10 egg yolks
  • 10 egg whites
  • 10 tbsp. sugar
  • 2 tbsp. sifted cake flour
  • 1 tsp. baking powder
  • 12 tbsp.ground walnuts
  • 4 1/2 tbsp.bread crumbs
  • 1 tsp. vanilla
  • 1/2 lb. unsalted butter
  • 2 squares semi-sweet chocolate,melted
  • 4 tbsp.strong instant coffee
  • icing sugar,sifted

Preparation

Step 1

TORTE:
Beat egg yolks and sugar until thick and pale yellow (about 10 min.)Mix together flour,baking powder,walnuts and bread crumbs.Fold into yolk mixture.Beat eggs with a pinch of salt to a firm peak.Fold egg whites into egg mixture.Put into two or three 9" cake pans.Bake at 350 F.for 10-15 min.Lower heat to 300 F and continue baking for another 15 min.until cake comes away from side of pan.Cool cake and frost with icing.

FROSTING:

Soften butter.Add melted chocolate to butter, stirring until well mixed.Add coffee and mix well.Add icing sugar tobutter mixture untill frosting thickens.Add coffee and sifted icing sugar to taste.
