Salmon with Pineapple Mango Salsa

Ingredients
- 2 cups diced fresh pineapple
- 1 cup chopped fresh mango
- 1/2 cup chopped red onion
- 2 Tbsp minced fresh mint
- 2 tsp minced fresh ginger
- 2 Tbsp lime juice
- 1 Tbsp honey
- salt and pepper
- EVOO
- 4 salmon fillets about 6 oz each - 1" thick

Step 1
Place the pineapple, mango, red onion, mint, ginger and chili pepper in a bowl. Toss well. Add the lime juice and honey. Mix well. Season with salt. Let rest for at least 15 minutes.
Meanwhile, preheat an outdoor grill or broiler with the rack about 6 inches from the heat source (or use a grill pan).
Brush the fish all over with olive oil. Sprinkle with salt and pepper.
Place the fish, flesh side down on the grill or on a broiler pan and place under broiler. Cover grill. Cook 3 minutes. Gently turn over fish. Cover grill and cook 5 to 9 minutes or to desired degree of doneness.
Serve fish with salsa.
