Ingredients
- Sauce:
- 1 package (10 oz) frozen sliced strawberries, thawed
- 2 T frozen orange juice concentrate
- 1 T lemon juice
- 1/2 tsp grated lemon peel
- Griddle Cakes:
- 3 eggs
- 1 cup low-fat cottage cheese
- 1/4 cup all-purpose flour
- 1 T sugar
- 1 T butter or margarine, melted
- pinch of salt
- vegetable oil
Preparation
Step 1
For sauce, place berries, OJ, lemon juice and peel in a large bowl. Mash berries with a fork and set aside.
For griddle cakes, whisk eggs and cottage cheese in medium bowl until well blended; add flour, sugar, butter, and salt. Mix well. Lightly brush griddle with oil; heat over med-high heat until hot. For each pancake, pour 1/4 cup batter onto griddle. Cook 2-3 minutes or until bubbles form and top looks dry. Turn and cook 1 minute longer. Serve with sauce.
Can be made the day before and stored in refrigerator until ready to use.
