This recipe if from my good friend Diana Hadden, it was her Mom's recipe, Judy Davis, who passed away this past year. Diana and her Mom made this Biscotti all of the time during the holidays and it is absolutely delicious! You won't be disappointed. Great as a gift or a special treat after a long day!

Ingredients

  • 3 eggs
  • 1/4 lb. butter
  • 1/4 c. milk
  • 1 c. sugar
  • 1 t. baking powder
  • 2 1/2 c. flour
  • 1/4 t. salt
  • 2 t. almond extract
  • 1/4 c. pecans, coarsely chopped & toasted
  • Chocolate for dipping/decorating

Preparation

Step 1


Preheat oven to 350.
Melt butter and allow to cool.
Combine wet ingredients and then add sugar.
Combine dry ingredients and add to wet. Mix well.
*Do all beating and mixing by hand.
Divide dough in half and put on greased cookie sheet.
Roll each pile of dough so that it’s approximately ½” thick and 4” wide.
Bake for 30 minutes.
Take out of oven and slice loaves into ¾” pieces.
Bake each side an additional 10 minutes. This dries the biscotti and makes it crispy.
Dip cookie into melted chocolate and let harden on wax paper.
Store in air-tight container.
