TUNA****Marinated White Bean and Tuna Salad Jars

Ingredients

  • FOR THE MARINATED WHITE BEAN SALAD:
  • 1 small garlic clove, minced
  • 1 tablespoon white wine vinegar
  • 1 teaspoon chopped fresh thyme
  • 1 tablespoon minced fresh dill
  • 2 tablespoons minced fresh parsley
  • grated zest and juice of one lemon
  • 1/4 teaspoon dry mustard powder
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon red pepper flakes
  • 3 tablespoons extra virgin olive oil
  • 1 can (19 ounces) cannellini beans, rinsed and drained
  • FOR THE SALAD JARS:
  • 1 small can Rio Mare tuna per jar, drained
  • 7 grape tomatoes per jar, halved
  • 1/4 small red onion, thinly sliced
  • 2 cups packed arugula, spinach or spring mix per jar

Preparation

Step 1

To make the Marinated White Bean Salad: In small bowl, whisk together garlic, vinegar, thyme, dill, lemon zest and juice, mustard powder, salt, black pepper and red pepper flakes. While whisking, slowly drizzle in oil until all oil is incorporated. Add beans and toss to combine. Set aside to marinate before constructing jars, if possible.

To assemble jars, divide salad between four large jars then top with remaining ingredients in order listed.
