Pampered Chef Rush Hour Fajitas

Ingredients

  • 2 pounds chicken tenders
  • 2 medium sweet onions
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 2 garlic cloves
  • 3 tablespoons Chipotle Rub
  • 1 tablespoon garlic canola oil
  • Flour tortillas
  • Grated cheddar cheese (optional)
  • Sour cream (optional)
  • Salsa or taco sauce (optional)

Preparation

Step 1

Add chipotle rub to chicken and knead it around to cover meat. Wedge onions and bell peppers and cut wedges in half lengthwise. Add garlic and canola oil to veggies. Knead.

Cook chicken in large skillet and break into small pieces. Add veggies and stir fry. Warm tortillas in microwave, add fajita mixture and optional toppings. Serve with hot cooked white or Spanish rice.
