Linguini with Shrimp, Roasted Tomatoes, and Spinach

Ingredients

  • 1/2 pint halved cherry tomatoes
  • 2 tsp chopped garlic
  • 1/4 cup olive oil + 2 Tbsp
  • salt and pepper
  • 1/4 cup bread crumbs
  • 1 1b linguini
  • 2 Tbsp butter
  • 1 1b shrimp
  • 1/2 cup chicken broth
  • 2 cups baby spinach

Step 1

Preheat oven to 450 degrees. In a baking dish, toss together tomatoes, 1 tsp garlic, olive oil, and salt and pepper to taste. Roast for 10 minutes. Sprinkle with bread crumbs and roast for 5 minutes, set aside. Boil linguini according to package. Heat large saute pan over medium heat. Add 2 Tbsp oil, butter, and 1 tsp garlic, and cook for 1 minute. Add shrimp, season with salt and pepper to taste. Saute until the shrimp are pink and cooked through, 3-4 minutes. Add chicken broth and cook for 1-2 minutes. Add drained pasta, roasted tomatoes, and spinach.
