Harvest Apple Mini-Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 T baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 egg
  • 3/4 cup apple juice
  • 1 medium apple, peeled and chopped

Preparation

Step 1

Preheat oven to 400. Lightly grease 24 mini-muffin cups. In large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt. In small bowl, whisk egg and juice. Add to dry ingredients; stir until just moistened. (Batter will be lumpy). Stir in apple. Spoon batter into prepared muffin cups, filling each cup 3/4 full. Bake 12-15 minutes or until golden brown.
