Summer Time Chicken Salad

Ingredients

  • DRESSING:
  • 1/2 cup cooked rice
  • 1 1/2 cup cooked chicken, cubed
  • 1/4 cup almonds, sliced or slivered
  • 1/3 cup celery, diced
  • 1/4 cup raisins
  • Mandarin oranges or pineapple
  • 1/4 cup tidbits if desired
  • 1 teaspoon honey
  • 2/3 cup mayo
  • 1/2 teaspoon lemon juice
  • 1 teaspoon sugar
  • 1/8 teaspoon salt
  • 1 teaspoon water

Preparation

Step 1

Toss foods lightly and add dressing. To sweeten add extra sugar. For tart flavor increase lemon juice.
