Marinated Carrots

5 c carrots, sliced into thin coins
1 medium sweet onion
1/2 c evoo
3/4 c vinegar
1 tsp worcestershire sauce
t tsp salt
1 bell pepper, cut into small pieces
Pepper to taste
1 can tomato soup, undiluted
1 c sugar
1 tsp yellow mustard

Ingredients

  • Cook carrots, drain and cool.
  • Cut onion and pepper, mix with carrots.
  • In separate bowl mix other ingredients. Pour over carrots, onions and peppers.
  • Marinate 12 hours. Drain from juice to serve.
