Baked Eggs with Cheese and Zucchini

  • 2 tsp butter
  • 2 tsp olive oil
  • 1/2 small onion
  • 12 oz zucchini or yellow squash, thinly sliced
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 oz shredded sharp provolone or Swiss cheese
  • 8 eggs
  • 1 tbsp heavy cream or chicken broth

Step 1

Preheat oven to 350 F

Heat butter and oil in large skillet over med. Heat until melted.

Add onion, zucchini/squash, basil 1/4 tsp salt, 1/8 tsp pepper

Cook until crisp/tender, about 5 to 8 min.

Spread zucchini over bottom of baking dish

Sprinkle with 2 1/2 tbsp of cheese

Add eggs, whole without breaking yolks or stirring

Sprinkle with remaining salt, pepper and cheese. Drizzle with cream or broth.

Cover with foil and bake until ages are cooked, about 20 min.
