Ingredients

  • Lemon Icing:
  • 1 1/2 c. flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 eggs
  • 1 c. sugar
  • 2 T. butter, softened
  • 1 tsp. vanilla
  • 1 tsp. lemon extract
  • 1/3 c. lemon juice
  • 1/2 c. oil
  • 1 c. powdered sugar (plus 1 T.)
  • 2 T. whole milk
  • 1/2 tsp lemon extract
  • 1/2 tsp. fresh grated lemon zest

Preparation

Step 1

Combine flour, baking soda, baking powder & salt. In another bowl, using a mixer, blend together the eggs, sugar, butter, vanilla, lemon extract & lemon juice. Pour wet ingredients over dry ingredients & blend til smooth. Add oil; mix well. Pour batter into a well greased 9x5" loaf pan. Bake at 350º for 45 minutes or til tests done.

To make icing, combine all ingredients & beat with mixer til smooth. When loaf is cool, remove from pan & frost top with icing. Let icing set before slicing.
