Heart Smart Sloppy Joes

Ingredients

  • 1-2 tsp canola oil
  • 1 lb ground turkey breast
  • 1/3 C diced onion
  • 1/3 C diced green pepper
  • 1/3 C diced celery
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp celery seeds
  • 1/4 tsp black pepper
  • 3 Tbsp brown sugar or Splenda/brown sugar mix
  • 3 Tbsp Worcestershire sauce
  • 1 Tbsp cider vinegar
  • 1 Tbsp horseradish
  • 1 can (6 oz) tomato paste
  • 1 C water
  • 6 fist-sized baked potatoes (optional)

Preparation

Step 1

In a large nonstick skillet, heat the oil over medium heat. Add the ground turkey, onion, green pepper and celery. Cook, stirring frequently, until vegetables are softened and meat is broken into crumbles and cooked through, about 6 to 8 minutes.

Stir in the chili powder, garlic powder, celery seeds, black pepper, brown sugar, Worcestershire sauce, vinegar and horseradish.

Continue to cook until all the liquid is absorbed, about 5 to 7 minutes.

Add the tomato paste and water and cook until combined and heated through.

Top each potato with 1/2 cup of sloppy Joe mixture.
