Sunburst Bran Muffins

Ingredients

• 2 C flour
• 1 T baking powder
• 1/2 tsp salt
• 1 egg
• 1 1/4 C milk
• 1 1/2 C 100% Bran cereal
• 1/3 C melted butter
• 1/2 C raisins, optional
• 1/2 C brown sugar
• 1 tsp grated orange rind
• 1/2 C orange juice

Preparation

Step 1

Preheat oven to 400. Line muffin tin.

Combine flour, B. powder and salt; make a well.

Beat egg with a fork. Stir in milk, cereal, butter, raisins, sugar, zest and juice. Mix well. Add to flour and sstir just until combined.

Spoon into muffin tin filling to the top. Bake for 20 minutes.
