Ingredients

  • 8 medium zucchini
  • 1 (8oz.) pkg. cheese, grated
  • 2 eggs, beaten
  • 1 c. rice, cooked
  • 1/4 c. onion, chopped (opt)
  • 1/4 c. dry bread crumbs
  • 1 T. parsley flakes
  • 1/2 tsp. salt
  • seasoned salt
  • paprika

Preparation

Step 1

Parboil zucchini 5-7 minutes. Cool. Cut in half lengthwise; scoop out pulp, leaving shell. Drain zucchini. Chop pulp. Mix with cheese (reserving 1/2 c. cheese), eggs, rice, onion, crumbs, parsley & salt. Sprinkle shell with seasoned salt. Stuff with mixture. Place in greased baking dish. Bake at 350º for 20-25 minutes or til heated through. During last few minutes of baking, sprinkle tops with reserved cheese & continue baking til melted.
