- 1 cup steel cut oats
- 2 teaspoons cinnamon
- 2-3 teaspoons pure vanilla extract or powder
- 1/2 teaspoon salt
- 1/2 cup dates, chopped
- 4 cups water

In a slow cooker, mix all the ingredients and the water together. Set it on low heat and cook overnight for 6-8 hours.
In the morning, spoon into bowls and serve with a light sprinkling of cinnamon if desired.
