Ingredients

  • 3/4 c. softened butter
  • 3/4 c. milk
  • 1 1/2 c. sugar
  • 3 eggs, lightly beaten
  • 4 tsp. instant coffee granules, dissolved in 2 T. hot water
  • 1 3/4 c. flour, sifted
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. roughly chopped pecans

Preparation

Step 1

Heat oven to 300º. Grease & lightly flour a loaf pan. Cream butter & sugar til light & fluffy. Add eggs & beat well. Add flour alternately with milk. Add coffee then fold in pecans. Pour into prepared pan. Bake at 300ºfor 1 hour & 20 minutes or til tests done (check after 1 hour & 5 minutes).Cool completely before slicing & store in an air tight container.
