Ingredients

  • 21/4 cups all purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 cup firmly packed brown sugar
  • 2 cups milk
  • 1/4 cup butter or margarine, melted
  • 4 tsp baking powder
  • 4 eggs, separated
  • 1 cup canned pumpkin
  • 1/2 tsp salt
  • 1 tsp ground allspice

Step 1

Prepare walnut orange butter, and set aside. In a small bowl, stir together flour, baking powder, cinnamon, allspice, ginger, salt and sugar. In a larger bowl combine pumpkin, milk and egg yolks; add flour mixture and butter; stir to blend. In a small bowl of an electric mixer, beat egg whites until soft peaks form; fold, into batter. Preheat waffle iron and pour batter onto grid; cook for about 5 minutes or until waffles are richly browned and crisp. Top with walnut orange butter.
WALNUT ORANGE BUTTER
Blend 1/2 cup (1/4 lb) butter or margarine,softened, 1/2 cup chopped walnuts, and 1/2 tsp grated orange peel.
