quickbread - Mini Lemon Yoghurt Muffins

Ingredients

  • 4 tbs butter softened
  • 1/2 cup white sugar
  • 1 egg
  • 3/4 cup self-raising flour
  • 1/4 cup low-fat plain yoghurt
  • 1/4 cup lemon juice

Preparation

Step 1

Cream butter and sugar until smooth then mix in egg.
Sift flour into butter mixture and combine well.
Add yoghurt and juice and mix until combined.
¾ fill greased mini muffin tin.
Bake at 180C for 10-15 minutes until cooked.
