GRAND MARNIER SOUFFLE

  • 1/4 cup flour
  • 1/2 cup sugar
  • 4 tbsp butter softened
  • 1 cup milk
  • 5 egg yolks
  • 2 tbsp Grand Marnier
  • 5 egg whites
  • Powdered sugar

Preparation

Step 1

Lightly butter a 1/2 quart souffle dish, dust with sugar to coat. Add foil collar, if desired. In mixing bowl, stir together flour, 1/4 cup sugar and butter to make a smooth paste. In saucepan, heat milk to boiling, immediately remove from heat and add butter mixture. Return to heat and cook and stir 2 minutes. Transfer to mixing bowl. Add egg yolks, one at a time, beating well after each addition. Stir in liqueur. Beat egg whites until foamy, continue beating to stiff peaks, gradually adding the remaining sugar. Fold yolk mixture into whites, turn into souffle dish. Dust top heavily with powdered sugar. Bake at 400F for 30 to 35 minutes. Serve immediately.
