Ingredients
- 1/3 cup olive oil
- 1 tsp salt
- 1 Tbls paprika
- 2 Tbls garlic powder
- 2 Tbls hot sauce
- 6-8 red potatoes, cubed
- 1 lb boneless chicken, cubed
- cooking spray
- 2 cups shredded cheese
- 1 cup green onions, chopped
- 1 cup bacon bits
Preparation
Step 1
In a large bowl mix together the olive oil, salt, paprika, garlic powder and hot sauce. Once mixed together add the cubed red potatoes and the pound of cubed boneless chicken. Mix thoroughly with the hot sauce mixture so all the potatoes and chicken cubes are coated.
Spray an eight-inch-by-eight-inch baking tray with cooking oil. Pour the potato and chicken hot sauce mixture into the baking tray and level off with a wooden spoon.
Place in the oven and bake for 50-55 minutes at 400 degrees F.
Take the baking tray put of the oven and sprinkle the two cups of shredded cheese on top. Add a layer of chopped onions and the cup of bacon bits.
Place back in the oven and cook again for five minutes at 400 degrees F.
