Ingredients

  • 2 Tbs. olive oil or unsalted butter
  • 3/4 c. aromatics(onion, garlic, carrot or shallot)
  • 1/4 tsp. cinnamon
  • 1 c. jasmine or basmati rice
  • 1 1/2 c. broth
  • 2 Tbs. fresh herbs

Preparation

Step 1

Saute aromatics in oil until soft. Season with salt and pepper.
Add cinnamon and cook 20 seconds.
Add rice and cook stirring, until grains are well coated and smell toasty.
Add broth and reduce heat to simmer. Cover and cook for 12-15 min.
Remove from heat and fluff the rice with a fork. Then cover the pot with a clean dish towel and seal with the lid for 10 min. The towel absorbs steam so the rice stays fluffy.
Fold in fresh herbs.
