Ingredients

  • 3-3/4 * 3-3/4 cups (925 mL) all-purpose flour
  • 6 * 6 tbsp (90 mL) granulated sugar
  • 1-1/8 * 1-1/8 oz (30 g) baking powder
  • 3/4 * 3/4 tsp (4 mL) salt
  • 4 * 4 cups (1 L) skim milk
  • 1-1/2 * 1-1/2 cups (375 mL) mashed ripe bananas (about 3 bananas)
  • 3 * 3 eggs
  • 1-1/2 * 1-1/2 cups [375 mL] chopped California walnuts
  • * Vegetable oil (or melted butter)
  • * Maple syrup or honey, if desired

Preparation

Step 1

1. Combine flour, sugar, baking powder and salt. In large bowl, whisk together milk, banana and eggs; add walnuts. Stir in dry ingredients just until moistened.

2. Heat griddle to medium-hot. Lightly brush with oil (or butter). Scoop 1/4 cup (50 mL) batter per pancake onto griddle. Cook about 2 minutes or until surface is dry and small bubbles appear; turn over and cook about 1 minute longer or until golden brown. Keep pancakes warm in low oven. Serve hot with maple syrup or honey.


Makes approx. 10-1/2 cups [2.5 L] (5 lb [2.3 kg]) batter, or 42 pancakes. Yield: 14 servings, 3 per serving.
