Ingredients

  • For the Brownie Layer
  • 1 1/2 cups granulated sugar
  • 3/4 all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon kosher salt
  • 3/4 teaspoon baking powder
  • 3 large eggs
  • 1 cup canola oil
  • 1 teaspoon vanilla extract
  • 4 oz unsweetened baking chocolate, melted
  • 1 cup semisweet chocolate chips
  • For the Cookie Layer
  • 1 stick (1/2 cup) unsalted butter, melted
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoons pure vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 3/4 cup semisweet chocolate chips

Preparation

Step 1

Line an 8x8 inch baking pan with aluminum foil. Spray with nonstick spray and set aside. Preheat oven to 350 degrees F.
1. In a medium bowl, whisk together sugar, flour, cocoa powder, salt and baking powder.
2. In another bowl, stir together eggs, oil, and vanilla extract.
3. In a heatproof bowl, melt baking chocolate in 30 second increments in the microwave until fully melted.
4. Using a rubber spatula, combine egg mixture with the dry ingredients and mix until fully incorporated. Add melted baking chocolate and stir until fully combined. Fold in chocolate chips. Pour batter into the prepared baking pan. Place in the oven and bake for 10 minutes.
5. Meanwhile, prepare the cookie dough. Using a spatula, mix together melted butter, brown sugar and granulated sugar in a medium bowl. Stir in egg and vanilla until incorporated. Add salt, baking soda, and flour and stir until smooth. Fold in chocolate chips.
Once the ten minutes have elapsed, dot cookie dough over the brownie layer in the oven. Cover with aluminum foil and let bake for another 50 minutes for gooey brownies or another 60 minutes for regular brownies. Remove foil from the pan and bake for an additional 10 minutes or until cookie layer is set and golden*. Let cool completely before cutting into bars. Enjoy!
