scalloped potatoes- cheesy

  • 1.5 tbsp. butter
  • small onion thinly sliced
  • 2 garlic minced
  • 1.5 tbsp. flour
  • 1/2 c stock
  • 1 c milk
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 pounds potatoes sliced 1/8 inch thick
  • 3/4 c cheddar cheese shredded
  • 1/4 c parmesan



Step 1

oven 400 degrees. spray 8x8 baking dish.
melt butter, add onion, saute until soft, 5 minutes.
add garlic and saute 1 more minute
add flour and cook 1 minute.
whisk in stock, add milk, salt and pepper cook until thickened, 2 minutes. remove from heat.
layer 1/2 potatoes in bottom of dish, pour half of onion mixture over potatoes, sprinkle 1 cup of cheddar cheese and all of parmesan cheese on next. layer with remaining potatoes, then onion mixture and the rest of the cheese.
cover with foil and bake 30 minutes. take off foil and bake additional 30 minutes until bubbly and cooked through.
