Breakfast Casserole

This was good for Bob's blood sugar. This isn't really a diabetic recipe, but was still very good for Bob's sugar.

Ingredients

  • 1

    (28 oz) pkg O’Brien frozen potatoes

  • 1

    lb bacon, fried and crumbled

  • 6

    eggs

  • 2

    cups milk

  • 2

    cups 1 (pkg) shredded cheddar cheese

Directions

1. Preheat oven to 350. 2. Spray a 9 x 13 pan with Pam. 3. Prepare potatoes as directed on pkg. 4. Fry, cool and crumbled the bacon. 5. Spread potatoes in pan. 6. Beat the eggs with the milk and pour this over the potatoes. 7. Top with the cheddar cheese. 8. Scatter the crumbled bacon over the top of the cheese. 9. Bake, uncovered at 350 for approximately 50 to 60 minutes. 10. Check often and if getting browner than desired cover with foil for remaining time.
