APPLE – LETTUCE – SPIINACH SALAD

Ingredients

• POPPY SEED DRESSING:
• 1 head lettuce
• 1 pkg. spinach
• 1 lb swiss, muenster, or Monterey jack cheese, cubed
• 3 apples, diced (do not peel, soak in salt water or Fruit Fresh to
• prevent browning)
• 1 cup cashews
• 1 T. grated onion
• 3/4 cup sugar
• 1 tsp. salt
• 1 tsp. dry mustard
• 1/3 cup vinegar
• 1 cup oil
• 1 T. poppy seeds

The poppy seed dressing is excellent on cole slaw and other fresh green salads.
