Ingredients

  • 1 onion,
  • 2 large ripe tomatoes,
  • 1 aubergine,
  • 1 courgette,
  • 2 green peppers,
  • 1 red pepper,
  • 2 cloves garlic,
  • 1 ActiFry spoon virgin olive oil,
  • Salt

Preparation

Step 1

Dip the tomatoes in boiling water for a few seconds and then remove the skin and cut into cubes. Peel the aubergine and courgette. Cut into pieces like along with the remaining ingredients (peppers, garlic and onions).

Add the oil to the ActiFry pan and heat for 1 minute. First cook the onion, then add the peppers, aubergine and courgette, ending with the tomatoes, for a total of 30 minutes.

Set aside for half an hour before serving. Season and add a little sugar if needed, since tomatoes can be a little acidic.
