Light Christmas Cake

My sister gave this recipe to me about 25 years ago and I still make it every year. It is not you traditional cake with dried fruit. This is my favourite Christmas Cake.

Ingredients
- 3/4 lb. candied cherries
- 3/4 lbs. chunky pineapple
- 1 1/2 lbs. pecan halves
- Chop fruit and pecans
- 1 lb. white raisins
- 1/2 cup flour
- CREAM 1/2 lb. butter
- 2 1/4 cup sugar
- ADD 6 eggs, one at a time (beat 1 min,)
- 1 oz. sherry or brandy
- In separate bowl SIFT
- 3 1/2 cup flour
- 1 1/2 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp salt
Preparation
Step 1
Add dry ingredients to butter and egg mixture. Add all the fruit and nuts.
Pour into 3 loaf pans or 1 large angel food pan. Line pans with parchment paper.
Bake large @ 275* - 3 hrs.
3 small Bake 270* - 2 hrs.
Sprinkle with brandy or sherry. Cover with cheesecloth and refrigerate.
Make this at the end of October and continue to sprinkle brandy/sherry every week.
