Zucchini Bread (Dash magazine)

Two cups of grated zucchini are baked into this moist bread. Nuts are optional add-ins.

Ingredients
- 3 eggs
- 1 1/2 cups sugar
- 3/4 cup canola oil
- 3 cups flour
- 1 tsp salt
- 1/4 tsp baking powder
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- 1 1/4 tsp vanilla extract
- 2 cups peeled, grated zucchini
Preparation
Step 1
Preheat oven to 350 F. Coat a 9-by-5-inch loaf pan with cooking spray.
Beat 3 eggs with sugar and oil for 1 minute. Add flour, salt, baking powder, baking soda, cinnamon, and vanilla extract. Beat until smooth. Stir in peeled, grated zucchini.
Transfer to pan; bake for 55 minutes or until a toothpick inserted into loaf comes out clean.
