Ingredients

  • 1 dozen

    chicken drumsticks

  • 1

    head broccoli (shaved)

  • 1

    bunch scallions (root ends trimmed)

  • 2

    jalapenos

  • 2

    tablespoons olive oil (plus one teaspoon)

  • 1

    lemon (juiced)

  • 1

    teaspoon honey

  • 1

    pinch chili flakes

  • kosher salt and freshly ground black pepper (to taste)

    tablespoons chili powder

  • 2

    tablespoons sweet, smoked paprika

  • 1/2

    teaspoon cayenne

  • 1

    tablespoon ground cumin

  • 1

    tablespoon ground coriander

  • 1

    tablespoon garlic powder

  • 1

    tablespoon onion powder

  • 1

    tablespoon kosher salt

  • 1

    tablespoon ground black pepper

Directions

Preheat oven to 400ºF. Line a rimmed baking sheet with aluminum foil. On the left side of the baking sheet, add the chicken drumsticks. Drizzle with 1 tablespoon olive oil and season with Southwestern Spice rub to taste. Reserve remaining rub for future use. Next to the chicken, add the scallions and jalapenos, drizzle with 1 teaspoon of olive oil and season with salt and pepper. Bake for 30 minutes. Finely chop the scallions and jalapenos, add to a large bowl. Add lemon juice, honey and chili flakes, whisk to combine. Season with salt and pepper to taste. Add the shaved broccoli and toss to evenly coat. Remove chicken and broccoli to serving platters. Southwestern Spice Rub: in a medium mixing bowl, add the chili powder, paprika, cayenne, cumin, coriander, garlic powder, onion powder, salt and pepper. Mix to combine. Tip: keep extra spice rub on hand and use as taco seasonings, in meatloaf and proteins of choice!
