Ingredients

  • small amount of flour for coating chicken
  • 1 c. Ranch salad dressing
  • 1 c. finely chopped pecans
  • 4 skinless, boneless chicken breast halves
  • 1 head romaine lettuce
  • 12 oz. can mandarin oranges, drained
  • 1 c. dried cranberries
  • 4 oz. blue cheese crumbles
  • additional Ranch dressing

Preparation

Step 1

Preheat oven to 400.
Lightly coat chicken in flour. Then dip in Ranch, then nuts to coat.
Arrange on a baking sheet.
Bake chicken 25 min. Cool slightly, and cut into strips.
On serving plate, arrange lettuce, oranges, cranberries and blue cheese.
Serve with Ranch dressing.
