frittata with asparagus and mushrooms

  • 1 bunch asparagus grilled and cut into 2 inch pieces
  • 6 mushrooms grilled and sliced
  • 1 c chopped onion
  • 1 tbsp oil
  • 10 eggs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 c shredded cheese
  • 1 tsp sage
  • 1 tsp rosemary
  • 1 tsp basil



Step 1

preheat oven 400 degrees. in medium fry pan over medium heat saute onions in oil until soft, 5 minutes. combine egg, salt, pepper in a bowl.
pour egg mixture into fry pan, add asparagus and mushroom. sprinkle with cheese, sage and rosemary. stir with spoon until mixture sets, 2-5 minutes.
transfer to oven and bake until puffed and set. 12-14 minutes. cut into slices and serve.
