FLOATING FRUIT PARFAITS

Step 1

Cut up 1/2 c strawberries and put in bottm of six glasses. Then stir 3/4 c boiling water into contents of 1 pkg (4 serving size) sugar free low calorie strawberry gelatin for at least two minutes until completely dissolved. Add 1/2 c cold water and 3/4 c ice cubes and stir until melted. Remove 3/4 c gelatin and pour evenly over strawberries in each glass. Refrigerate 20 minutes until set but not firm. Meanwhile add 1 c Cool Whip to remaining gelatin and whisk well. Then after 2o minutes spoon over six glasses. Refridgerate 1 hour or until firm. Garnish each parfait iwth 1 tbsp Cool Whip and strawberry slice. WE TRIED THIS 5/16/2010 AND EVERYONE LOVED IT.
