Coconut Almond Granola

A crunchy granola with coconut and almonds and glazed with olive oil, vanilla, honey and coconut syrup.

Ingredients

  • 3 cups Rolled Oats
  • 1-1/2 cups Slivered Almonds
  • 1/2 cup Cashew Pieces
  • 3/4 cup Shredded Sweetened Coconut
  • 6 tbsp Brown Sugar
  • 2 tbsp Honey
  • 4 tbsp Coconut Syrup
  • 1/4 cup Olive Oil
  • 1 tbsp Vanilla
  • 1/2 tsp Cinnamon

Preparation

Step 1

Preheat oven to 275 degrees.

In a large bowl, combine the oats, nuts, coconut and brown sugar. Stir until well blended.

In a separate bowl, combine honey, coconut syrup, olive oil and cinnamon.

Pour liquid mixture over the dry ingredients and stir well.

Pour onto a large baking pan; cookie sheet or metal 9x13 is fine.

Bake for approximately 60 minutes, stirring every 15 minutes. At 30 minutes, raise oven temperature to 300 degrees and continue stirring every 15 minutes.

When it has been baking for 45 minutes, take out a spoonful and let it cool. If it is still very moist continue baking for 15 minutes and then try it again. You want your granola to be dry and crunchy when it cools down. You might need to give it an extra 15 minutes. Watch it closely at then end. Stir the edges in so that they don't burn.
