- 2-8 oz. blocks cream cheese
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- Vanilla Wafers
- Cherry Pie Filling

Step 1
Preheat oven to 350. Place cupcake liners in cupcake pan, drop one vanilla wafer cookie in the bottom of each liner. With electric mixer, mix cream cheese and sugar together. Add eggs, one at a time while mixing, add vanilla, mix till smooth. Fill cupcake liner ALMOST full. Bake 20 minutes. While cooling, the cheesecakes will fall, leaving an indentation for the pie filling. Top with pie filling when cool. Refrigerate. Makes 12-15 cheesecakes.
