Strawberry Surprise Cupcakes

Ingredients

  • 1 cup Pillsbury TM yellow cake mix
  • 1/3 cup water
  • 3 tbsp. 2% fat plain Greek yogurt
  • 1 egg
  • 9 strawberries, hulled, divided
  • 1/4 cup Pillsbury Strawberry Frosting
  • 1/4 cup non-fat strawberry Greek yogurt

Preparation

Step 1


Preheat oven to 350*. Insert six cupcake wrappers into a muffin tin.
In a medium bowl, mix together cake mix, water, yogurt and egg.
Beat for 2 minutes on medium speed.
Fill cupcake wrappers half way.
Push in a whole strawberry into each cupcake.
Top with remaining batter.
Bake for 19 to 23 minutes.
Cool pan on a wire rack for 5 minutes.
Then place cupcakes directly on wire rack and cool completely.
In a small bowl, mix together frosting and yogurt.
Spread onto each cupcake.
Slice the remaining two strawberries into four pieces each.
Top each cupcake with two slices of strawberries.
